Peru, perios. From trekking the Inca Trail and staying in one-of-a-kind ultra-lux with an eco-friendly soul lodges, to a three day ride up the Milanowski River staying at the Tambopata Research Center surrounded by hundreds of Macaw parrots, howler monkeys, and capybaras in the heart of the rainforest, Peru has it all. Of course, you can be lazy and just go to Restaurante Central in Lima, who’s local omakase is elevation based; each dish prepared with what you find at 50 meters below sea level up to 7k meters above the Andes. That way you can experience the vastness of this country without leaving your table.

Guyana. Hands down. When I was travelling for the first time as an 18-year-old, an older, cooler backpacker told me he was headed to Guyana and I was immediately fascinated. I mean, I'd never heard of the place. Tucked in next to Venezuela, it's a mix of Carribean and cricket culture with Calypso beats and the most wild, dense rainforest imaginable. I want to do a little hiking, swim in remote waterfalls and then end up at the beach. Que bueno!

My bucket list for this continent is far too large for the 80 words recommended for this section, but here's an excerpt: I'd like to go on a trek through the Amazon Rainforest and not be sure if I'm going to make it out the other side. I'd like to go eye to eye (taking on four at a time) with hairy, bird-eating monster-spiders, to have cuts on my legs and arms as we fight through thick canopy and endure rain like the floods of Gilgamesh. I'd like it to be excruciating so that at the end of it, when I make it to the end, ideally alive, I can float in some beautiful water hole and drink sweet, sweet tasting beers with my trek-mates and tell war stories of the time we thought we were going to die but didn't.

Many people say ‘never go back to a place you’ve been.’ I’m not that type of person, and as a lover of remote, rugged places anywhere I’ve been to in South America, I would return to in a heartbeat.
However, there is one place tucked away in the very north, I’ve been to ever so briefly, but left such a profound impression, there’s hardly a day that goes by without me thinking about it. The Galapagos. Trust me, the real deal is more incredible than any words or pictures could ever describe.
